Okay, so our new Summer Menu has been out for a few weeks so thought I would give you some insight into my thinking/reasoning behind some of the dishes. Essentially I have drawn most of my inspiration from Asian flavours & textures. These Simple, clean, fresh and aromatic flavours work extremely well with the tropical climate and produce of Townsville and Far North Queensland.
Whilst strong Asian influences are dominant, we also draw on technique and flavour from an eclectic mix of cultures and nationalities letting the natural flavours come through without over complicating the dishes, and allowing the produce to speak for itself.
We have introduced some new produce to the Summer Menu – Moreton Bay Bugs, Cloudy Bay Clams and Atherton Goat as well as JAM Corner staples such as local prawns, scallops, Huon salmon, Western Plains pork and grain fed beef.
Our desserts focus on classic flavours with a modern interpretation, such as Turkish Delight, Lemon Meringue, Choc Banana and Apple Crumble.
