March 25, 2012For me personally show casing Townsville and North Queensland produce was the inspiration behind the new JAM Menu and the desire to present simple yet flavour packed dishes.
Matt and I have an extremely parallel view on produce, execution and presentation with clean fresh flavours always a must. I believe the Middle Eastern and Spanish influence introduced to this Menu really suits the warmer climate of North Queensland whilst allowing the produce we’ve chosen to shine through.
I have always been influenced by my Grandmother’s cooking – simple food made with love – and this is an approach I always flow into my dishes.
