For me personally show casing Townsville and North Queensland produce was the inspiration behind the new JAM Menu and the desire to present simple yet flavour packed dishes.
Matt and I have an extremely parallel view on produce, execution and presentation with clean fresh flavours always a must. I believe the Middle Eastern and Spanish influence introduced to this Menu really suits the warmer climate of North Queensland whilst allowing the produce we’ve chosen to shine through.
I have always been influenced by my Grandmother’s cooking – simple food made with love – and this is an approach I always flow into my dishes.
